Reconstituted coconut water is prepared by taking coconut water concentrate (made by removing water through evaporation) and adding water back to reach the final volume. Because the concentration process involves heat and vacuum, some volatile flavour notes are lost. That is why some reconstituted brands add extra minerals and natural flavours – to bring back taste and electrolyte levels that get reduced during processing. These products also tend to use a combination of chemical preservatives like potassium sorbate (INS 202) and sodium metabisulphite (INS 224) for longer shelf stability.

The 100% category offers a cleaner label and closer-to-fresh experience, while reconstituted versions are generally more economical and have a longer shelf life due to the additional processing and preservatives.
